Speaker: Dora Marinova is a Professor of Sustainability at Curtin University. Her work is in the areas of sustainometrics, innovation and technological waves, decarbonising food and transitioning to sustainability. She has more than 360 refereed publications and has successfully supervised more than 75 PhD students. Two of the books she has edited have been awarded Best in the World at the prestigious Gourmand Awards for food. Three of her recent journal articles are ranked in the top 5% in the world for the media attention they have received. Her latest book Food in a Planetary Emergencywill be published by Springer Nature in March 2022.

Abstract: Income improvements in China have resulted in changes in people’s preferences for food, making meat-based options more affordable. In the last 20 years, the annual meat consumption in China has increased by 24% to 46 kg per person. Because of the size of China’s population, such changes have serious global implications in terms of resources, land use, climate change and animal welfare. On the other hand, the world is gradually exploring and moving towards more plant-based options with the global market for meat substitutes estimated at A$10 billion in 2020 and expected to reach A$3 billion in Australia by 2030. Given its traditional use of tofu and soy products, China has the opportunity to become the new frontier for meat substitutes. This will not only safeguard the health of the planet but also improve human well-being.

演讲摘要:中国收入水平的提高改变了人们对食物的偏好,使得以肉类为主的食品变得更受欢迎。近20年来,中国肉类年消费量增长24%,达到人均46公斤。由于中国人口众多,这种变化在资源、土地利用、气候变化和动物福利方面具有显著的全球影响。另一方面,全球肉类替代品的市场在2020年估计为100亿澳元,预计到2030年澳大利亚将达到30亿澳元,世界正在逐步探索并转向更多植物性饮食选择。鉴于对豆腐及豆制品的传统使用,中国有机会成为肉类替代品的新前沿。这不仅将保障地球健康,也会促进人类福祉。
